So i'm interested in reading Legacy-era books. But with the myriad of options...where do I start?

I'm starting at Betrayal.

You should start it too, and see who finishes it first?

Legacy of the Force can be skipped whole-sale; shitty civil war, Jacen's character is ruined fully.

At least with Fate of the Jedi it's a new story. I've yet to read a thing from it, though.

You can do what I'm doing. Start at bounty hunter trilogy. Work your way chronologically until the end. Then start Darth Bane series and work your way back to bounty hunter trilogy.

Despite what many say about the Legacy of the Force series, I think it is a good read. Many things happen that anger countless fans, but they are all important and part of our beloved universe. We must accept the good and the bad or stay out of it entirely. So anyway, start with Betrayal, the first book in the Legacy of the Force and the first book in the Legacy era.

I accept all the events of the LotF series; however, that does not mean I need to like the series.

Recap of the LotF: Second Galactic Civil War without the cool aspects of the First Galactic Civil War and a lot of very poorly explained political 'intrigue' culminating in an angry anti-Jedi Galactic Alliance.

Fate of the Jedi is, at least from what I've seen/read, trying to branch away a BIT from what's been done a thousand times already.

Legacy of the force and fate of the jedi are the shittiest books in Star wars and that is saying something.
