If the Rebels we going to raid a factory/depot, they'd would need a means of transporting the equipment they capture off-world to their ships (Dropships? Freighters?). It also needs to be large/substantial enough to make it a worthy target. A single tank or a few speeder-bikes isn't really much in the grand scheme of things.
One option could be that instead of actually hijacking the equipment, they try and gain the people with the knowledge, skills and connections to actually get a half-decent production going, whether that be a secret alliance under the Imperium's nose (the Hutts, independent worlds, etc) or actually extracting those people (former/hiding/imprisoned Galactic Alliance engineers) to work hand to mouth with the Rebels, though that would mean they'd actually need the facilities.
Instead of raiding a factory and stealing a few dozen or so vehicles it would be better to steal schematics of vehicles and weapons and use them to build equipment to our own specifications. This eliminates the need for large scale assaults and ships to transport the commandeered vehicles away. It also means 2-3 man/woman teams can infiltrate the target, steal what we need and get out and draw far less attention than raiding a factory and stealing everything. Infiltrate a target, steal the schematics, sabotage the factory/base, extraction. Thats how you would want to go about doing this sort of thing, and don't worry about how we would go about funding the construction of these new toys, I'm currently working on a side project with the uppers to come up with a way to get the funds. I know a lot of rebel PCs are more the pilot and warrior type but honestly what we need more then anything right now are spies, intelligence officers, special operatives, assassins, and negotiators. Before we can have the ability to launch a full scale war we need to do the nitty-gritty things that make it possible.

Who said raid. I mean fully blown loot like in we hit a depo and drain it dry. There would be enough to reverse engineer, field a large ground forces and we could possibly steal manufactureing tools and machines.
Main resean for a ground strike is it is better to RP than a computer hack.
