Advice on creating an older jedi?

So I'm thinking of making a jedi character and I want them to be probably an older male. The goal is an older wise experienced jedi, something like Qui-gon Jin, or Duncan from DragonAge. Obviously however they have to start as a padawan, and an old wise experienced padawan seems a bit odd, so I was curious if anyone else has made older jedi and how they handled or would handle it. I could make them younger to start, but that would bank on a time-skip.

So far I'm thinking: former jedi or even sith, cut himself off from the force and left the order, or was exiled. Hasn't fought or had any excitement in a long time. Now some call to action pushes him to return to the fold and begin again as a jedi, having to relearn from square one.

Or he could just be a long-time independent force-user who'se only just now coming into the order.

Anyone have thoughts on this?

I think you might have to start as a young padawan and then rp them up to the rank of a jedi master and then change his look, to fit that he has aged over time

Without knowing if there are any potential hiccups on getting such a character approved, I fancy the idea of having an older former Sith turned Jedi. Sounds like it would be interesting to RP with him.

A long time independent force user could work too, I guess. Just keep this in mind (found here):

^Right, that's why I was thinking independent background could explain why he isn't more developed in the force at his age, but that way could still be experienced and what not.

Yeah, I wasn't intending the sith idea at all, but it popped into my head and now it's really growing on me. Might play it safe and do late 30's-ish? And have him be raised Sith, and have a history of being a light-side good guy in the Empire before eventually leaving it entirely and defecting to the Jedi.

If you were thinking about going for someone around his 50s (that's how I imagine Qui-gon and the impression I got from searching for Duncan), perhaps he could've left the Sith when he was around 20-30 years old and gone about his life peacefully until now? That would give him a break from developing too much while growing old and still having trained in his youth.

As long they only started recieving training from the Jedi within the last 5 years it should work. My Jedi was raised by the sith, got some basic force training, and then ran away to begin her formal training as a padawan when discovered by the Jedi. So very much doable.
