Two things:

1) He's said this before, and he was serious then, but then he saw the script for Star Trek and was like WOAH so he did it. I'll bet if JJ Abrams and crew asked him to do the second one, and he liked it, he'd do it. On that note;

2) Zachary Quinto said he wants Nimoy in the next Star Trek movie.​

He's been the villain on fringe practically all this season, there was the recent Star Trek film aswell, he most definitely was not in retirement.
