Since I have yet to be involved in one, how exactly does a fight start, and what takes place during a fight? I guess the real question is...how do I fight?

Well, starting...

Starting a fight usually involves a mutual agreement between two roleplayers that there will be a fight. More often than not anyways; in some open roleplays you can actively engage in fights without consent, forcing the person to fight.

During a fight, it is taken as a turn by turn basis. Something similar to this:

Juice (Turn 1):

Eli swung his rifle around from it's holstered position at the back and with no hesitation brought it to his eye; with sights lined up he fired off three consecutive rounds aimed directly at the centre mass of Sogusmetta. Should the rounds hit they would be an almost decisive victory.

Sogusmetta (Turn 2):

Sogusmetta brought the lightsaber forth from his belt as Eli swung the rifle around. No sooner had Eli fired the rifle when he activated the saber and swung it in a perfect arc across his torso; all while spinning to his left. As he did so he narrowly avoided one fired shot and easily deflected the other two. As soon as the rounds had been avoided and deflected he wasted no time in dashing towards Eli at full speed, his lightsaber in his right hand, blade skimming the ground behind him.

Juice (Turn 3):

Eli panicked slightly at the incoming Jedi and fired two more rounds off at the fast approaching figure. The shots were bluntly aimed at best; by this point Eli was retreating backwards. His rifle held firmly in two hands; as if to parry the attack should the shots miss.

Sogusmetta (Turn 5):

Sogusmetta brought the blade up and across his chest quickly; deflecting the two rounds with little effort. He had the advantage of speed over the soldier and had quickly reached within striking distance. With the blade already above his head ready to strike he let the blade slash diagonally down left, across Eli's torso.

Juice (Turn 6):

Eli took this chance and as the blade came down he stepped in and brought his rifle under the Jedi's wrist. The rifle was parallel to the both of them so that it would have acted as a barrier between the lightsaber and Eli. Without hesitation Eli had produced a service pistolm he slammed it into his opponents abdomen and let loose three rounds.

This is an example of my style of fighting, considered Hybrid by many forums. It relies heavily on assumption and correction.

Basically you want to uber-describe (didn't do it here, so much) describe where your weapons are, what your armour is like to a tee. Describe visible things that the enemy would see. Describe whether your striking up or down and with your left or right hand. It's important to remember that roleplaying a fight is EXACTLY like describing how to fight in real life; that in itself is Martial Arts.

And lastly, never Godmod one hit kill stuff. Dont just be like

"Sogusmetta used force choke on his opponent and then force lightning then threw his lightsaber into his head"

Thats called Godmodding. Or doing the impossible can be called the same.

Of course the key to winning your fight is to out-bore your opponent. I recommend attaching extracts from trashy teen magazines, or Desperate Housewives scripts at the end of each post. A few rounds of that nonsense and having your rectum impaled with a lightsaber seems like a reasonable alternative.

Like have a character fight in a mini skirt and tight shirt, then when you begin to lose, have it all come off "accidentally" and give yourself a complete advantage :CHappy:

That really depends on your opponents likelyhood to be aroused by fan fiction. This ploy would presumably be effective of Bac :CHappy:
