As someone who has done real training in dueling and swordfighting... one blade is versatile, fast, and extremely deadly. You can do more, hit harder, and defend faster with one blade, or using a blade and dagger.
There are dual weapon styles that can work, but they are still very specific and require a lot of practice, and only involve two weapons so you still have a remotely solid grip.
My advice? Look up japanese, european, etc... styles and reach your own conclusions. Just look at official sources/manuals about the styles.
